I am often asked: “What inspired you to become a chef?” And in all honesty, I have to say that I truly owe this inspiration to my Mother. She helped me developed passion for great food and cooking early on in my life. My sisters and I grew up on our family farm so from early childhood we were immersed to only freshly picked, all natural vegetables and fruits. I remember accompanying my Mother to the farmer’s market every Sunday morning and watch her pick fresh meat and fish, herbs and spices. Later that day she would make a delicious dinner that would gather the whole family around the dinner table. Since those days I associate good food with enjoying a great time with your family and friends and loved ones. From that time on in my heart I knew that becoming a chef was my calling.
I have trained under several great chefs in the past, but I never stopped learning as I believe that every new day and every new person brings new knowledge to your life. I also get my inspiration from the work of some of the greatest chefs of our time, like Jacques Pepin, Julia Childs, Hiroyuki Sakai, Tomas Keller and Graham Kerr. In my life, I have had the most wonderful opportunities to attend different culinary schools and to work around the world: from Venezuela and Aruba to Singapore, Italy, Switzerland, Toronto and the US. Having these amazing chances to experience cultures and cuisines of different counties and continents provided me with incredible inspiration in my work: I love to combine exotic flavors and infuse my creations with international flare.
